Giving birth to a child causes alot of stress to a woman's body. Excessive bleeding, sweating, body pains are some of the common problems. The confinement period has the objective of strengthening the mother's body to its original health or even better, as well as to restore the uterus back to the original size. The confinement period is typically divided into 4 stages. A woman is at her weakest right after childbirth and hence it is not advisable for her to eat tonics or nutritious food immediately. Stage 1 (1st Week after Childbirth) Clear lochia (vaginal discharge for the first fortnight after birth), and heal existing wounds. While it does not boast of '23 different secret herbs and spices', i can certainly say that the marinade consisting of *shhh, a not-so-secret secret* oyster sauce, shao xing wine, dark soy sauce, sesame oil and crystal rock sugar, that brings out the finest of the fowl flavour. How ? ahhh.. you'd have to try it to find out. Certainly a much healthier alternative to deep-fried chicken, braising allows the chicken to absorb the flavours of the marinade, allowing it to be succulent, delicious and an altogether ass-whopping alternative to the fat old white guy's chicken.     Uncle bob loved this dish. Whenever i visited him at his home in kampung balonglong for breakfast, he would always be preparing literally giant heaps of this freshly steamed yam cake. Well, you might scoff at it and think, whats so special about the humble yam cake ? its sold everywhere and is such a staple traditional chinese breakfast food. BUT that is why Uncle Bob's recipe is special. Because it makes such an ordinary dish, extra-ordinary. According to Uncle bob, the secret always lies in the fried dried shrimp. Since yam doesnt really have much flavour and doesnt have a strong taste, eating it with spring onions and freshly chopped shallots doesnt give it much character. But when you add freshly dried shrimp into the yam paste, it lends it the flavour of the sea, with just the right hint of saltiness and that brine flavour that whets your appetite. It transform the soft, sweet and altogether placid yam cake, into a absolutely delicious, fresh hot steaming mound of goodness that you cant wait to have more of.     This dish is molecular gastronomy at work. Long before molecular gastronomy became a fad among western chefs, chinese chefs were already practicing it. Scalding the pork belly in boiling water singes and cooks the pork belly in a flash, with the residual heat cooking the meat from the inside. Deep frying, makes the outside crispy while locking it the juices and flavor. Soaking it in (preferably ice-cold water) causes the layer of fat in pork belly to gelatinize, becoming a slightly firm, light chewy layer. Braising it for high heat extracts the flavours of the seasoning and vapourizes it for easy absorption. The following one hour of braising allows for the vaporized seasoning to seep into tiny cracks of the pork belly, infusing it with a rich and tasty flavour that becomes one with the pork belly.     Uncle bob loved this dish. Whenever i visited him at his home in kampung balonglong for breakfast, he would always be preparing literally giant heaps of this freshly steamed yam cake. Well, you might scoff at it and think, whats so special about the humble yam cake ? its sold everywhere and is such a staple traditional chinese breakfast food. BUT that is why Uncle Bob's recipe is special. Because it makes such an ordinary dish, extra-ordinary. According to Uncle bob, the secret always lies in the fried dried shrimp. Since yam doesnt really have much flavour and doesnt have a strong taste, eating it with spring onions and freshly chopped shallots doesnt give it much character. But when you add freshly dried shrimp into the yam paste, it lends it the flavour of the sea, with just the right hint of saltiness and that brine flavour that whets your appetite. It transform the soft, sweet and altogether placid yam cake, into a absolutely delicious, fresh hot steaming mound of goodness that you cant wait to have more of.
