  • Homemade Meat Roundel

A simple recipe that combines minced meat (Whatever you choose, beef, chicken, lamb, fish) with a wicked seasoning base that marinates and teases out the flavour of the meat. The patty shape allows it to be pan seared and crisp on the outside but locks in the meat juices and seasoning on the inside. This makes for fantastic finger food and an awesome beer snack. Suitable for vegetarians if you substitute the minced meat with mashed chickpea. • Imperial Chicken

Legend has it that this lofty-sounding recipe, actually came about by accident. An ancient emperor of china had grown bored and had no appetite for eating, living and affairs of the state. As he sat, bored and listless on his throne, he was said to have smelt this most heavenly and delicious smell wafting through the corridors of the imperial palace. Excited and seduced by the smell of chicken, boiled together with red dates, angelica, ginger and dark dates, he sent his courtiers to hunt high and low for the welcome perpetrator of culinary genius - only to discover that it was a humble beggar who had cooked a chicken with herbs he had stolen from the imperial kitchen. The emperor tried the dish and was so impressed, he made this dish his daily soup dish and appointed the beggar to the imperial chef in chief. happily for us, the beggar's culinary genius remains a carefully preserved tradition (albeit embellished with a little of the royal touch in its more modern iteration) Photo Credit: -Flickr -avlxyz [Creative Commons] Check out this delicious recipe by clicking on the thumbnail image!

  • Paper-Wrapped Chicken

paper chicken is a classic recipe that is an ageless favourite. Who can deny the aroma that wafts through the air of deep-fried chicken, yet unlike the uncouth versions sold by the bucket from a dime-a-dozen fast-food establishments, this version combines chicken wings in a whopper of a chinese style marinade. with chicken wings delicately marinated in hua diao wine, ginger juice, shallots, oyster sauce and sesame oil, this chicken is thoroughly seasoned from the inside and infused with flavour. Placing it in a paper bag with coriander leaves, ginger and shredded red chilli, infuses the exterior with their spicy flavours, which are then sealed in by boiling hot oil. • Braised Chicken Wing

Think of chicken and the first thing that would come to mind is probably a fat overweight dude with an impressive mustache and his fried chicken from a certain mid-west state of America. Tsk tsk tsk. What would ip man say about that ? rediscover chinese style chicken with an equally fantastic taste. While it does not boast of '23 different secret herbs and spices', i can certainly say that the marinade consisting of *shhh, a not-so-secret secret* oyster sauce, shao xing wine, dark soy sauce, sesame oil and crystal rock sugar, that brings out the finest of the fowl flavour. How ? ahhh.. you'd have to try it to find out. Certainly a much healthier alternative to deep-fried chicken, braising allows the chicken to absorb the flavours of the marinade, allowing it to be succulent, delicious and an altogether ass-whopping alternative to the fat old white guy's chicken. Ip-man would approve of this recipe. Photo Credit : Flickr - ymageao{Creative Commons} Check out this delicious recipe by clicking on the thumbnail image!

  • Ipoh Curry Bread

This recipe was said to have been created under the circumstances of an unfortunate accident, when an famous ipoh baker came home late one night after a long day at work in his bakery, only to find that he had no bread, rice or noodles to go with the curry his wife had prepared. Devastated and filled with righteous fury, he swore that he would correct this travesty of justice. lo and behold, he then invented the golden pillow. like inception, it is a curry within a shell of bread, that is a curry with bread and bread that comes with curry. all too complex for me to understand, all i know is that it tastes damned shiok. Highly recommended that you try. Photo Credits: -flickr -clf [Creative Commons] Check out this delicious recipe by clicking on the thumbnail image!

  • Pan Fried Prawn

Aunt Bertha created this recipe once when she ran out of sambal belacan while preparing this dish for a party (unthinkable right ? which self respecting singaporean foodie can do without a bottle of sambal belacan on stand-by !!) She improvised by substituting hua diao wine, dark soy sauce (sos Kicap) and oyster sauce to create this deliciously divine sauce that is sweet, tangy without being nauseatingly mediocre like sweet and sour pork sauce. The party loved it and the rest they say, is history. Photo Credit: -Flickr -71284893@N00 [Used under Creative Commons License] Check out this delicious recipe by clicking on the thumbnail image!

  • Steamed Yam Cake

Uncle bob loved this dish. Whenever i visited him at his home in kampung balonglong for breakfast, he would always be preparing literally giant heaps of this freshly steamed yam cake. Well, you might scoff at it and think, whats so special about the humble yam cake ? its sold everywhere and is such a staple traditional chinese breakfast food. BUT that is why Uncle Bob's recipe is special. Because it makes such an ordinary dish, extra-ordinary. According to Uncle bob, the secret always lies in the fried dried shrimp. Since yam doesnt really have much flavour and doesnt have a strong taste, eating it with spring onions and freshly chopped shallots doesnt give it much character. But when you add freshly dried shrimp into the yam paste, it lends it the flavour of the sea, with just the right hint of saltiness and that brine flavour that whets your appetite. It transform the soft, sweet and altogether placid yam cake, into a absolutely delicious, fresh hot steaming mound of goodness that you cant wait to have more of. • Mother of all Pau

This recipe is the stuff of legends. If this pau could reproduce itself, we would be facing a pau epidemic which could threaten the culinary survival of the human race. it is that badass and dangerous. Forget the dudes from epic meal time on youtube, This is epic dim sum, healthy hong kong style. This recipe is really simple, imagine a pau, which fits in your hand and is steamed to perfection, with its fillings and juice, bursting into your mouth as you bite into it. Only bigger, a helluva lot bigger. The increase in size increases the epic-ness of this already epic dish, as it allows you to combine and fuse whatever ingredients you might want to add. try crabstick, try salted eggs, try bacon (yes! what epic meal would be epic without the epic-est ingredient ?) try and experiment to your hearts content. this dish is (wait for it...) going to be LEGENDARY ! • Hangzhou Dong Po Pork

This dish is molecular gastronomy at work. Long before molecular gastronomy became a fad among western chefs, chinese chefs were already practicing it. Scalding the pork belly in boiling water singes and cooks the pork belly in a flash, with the residual heat cooking the meat from the inside. Deep frying, makes the outside crispy while locking it the juices and flavor. Soaking it in (preferably ice-cold water) causes the layer of fat in pork belly to gelatinize, becoming a slightly firm, light chewy layer. Braising it for high heat extracts the flavours of the seasoning and vapourizes it for easy absorption. The following one hour of braising allows for the vaporized seasoning to seep into tiny cracks of the pork belly, infusing it with a rich and tasty flavour that becomes one with the pork belly. Truly a gastronomical marvel. die die should try. Photo Credit: -Flickr -logicalrealist [Used under creative commons] Check out this delicious recipe by clicking on the thumbnail image!
