  • 300 gram lotus seeds
  • 1 tablespoon Alkaline water
  • 245 gram Caster sugar
  • 250 gram durian meat
  • 150 gram peanut oil
  • 0.5 teaspoon Maltose

1. Put the lotus seeds and alkaline water in a pot. Add one litre of water and boil for 6-7 minutes. Wash the lotus seeds. Remove the green centres. Soak them for 30 minutes.

2. Cook the peeled lotus seeds with 250 ml of water until soft. Drain the water. Blend the lotus seeds into a fine paste.

3. Heat the saucepan over low heat. Add the paste. Cook the paste with sugar over low heat. Mix in the durian.

4. Put 2 tablespoon of oil each time. Keep cooking and stirring the paste. Add the maltose untll the paste is thick.
