    Uncle bob loved this dish. Whenever i visited him at his home in kampung balonglong for breakfast, he would always be preparing literally giant heaps of this freshly steamed yam cake. Well, you might scoff at it and think, whats so special about the humble yam cake ? its sold everywhere and is such a staple traditional chinese breakfast food. BUT that is why Uncle Bob's recipe is special. Because it makes such an ordinary dish, extra-ordinary. According to Uncle bob, the secret always lies in the fried dried shrimp. Since yam doesnt really have much flavour and doesnt have a strong taste, eating it with spring onions and freshly chopped shallots doesnt give it much character. But when you add freshly dried shrimp into the yam paste, it lends it the flavour of the sea, with just the right hint of saltiness and that brine flavour that whets your appetite. It transform the soft, sweet and altogether placid yam cake, into a absolutely delicious, fresh hot steaming mound of goodness that you cant wait to have more of.     i have always loved the coconut tarts that you can find at the mom and pop bakeries here in singapore, but they generally tend to be flawed. They are either too sweet, having too much sugar or they will scrim on the grated coconut bits, which takes away half the texture and cuts back on the delicious coconut taste. Now with this recipe from uncle bob (my favourite uncle who is a chef), you can create THE perfect coconut tart. This recipe combines the coconut, tart and pastry in perfect proportions which creates a thick, pie-like crust which melts in your mouth because of the high butter content, with a absolutely gorgeous, indulgently creamy custard center and topped with with golden brown bits of grated coconut right at the top in a fragrant yet slightly singed combination of perfection. the verdict ?
